Sodium Benzoate

It is an effective antimicrobial agent for the preservation of foods and beverages whose pH is less than 4.5, whether it occurs naturally or adjusted by means of an acidulant. It is effective against yeasts and bacteria and of little action against fungi. It is very soluble in water and soluble in alcohol.
