Sorbic Acid

It exists naturally in certain foods such as Swiss cheese. It is easily digested and metabolized in the same way as carbohydrates. It does not inhibit the action of yeast, so it is ideal for use in fermentation processes. It is very soluble in water and poorly soluble in alcohol.
