Natamycin (Pimaricin)

Natamycin, also known as pimaricin, is an antibiotic obtained from steptomyces natalensis. Insoluble in water, soluble in acetic acid and poorly soluble in alcohol, it is used to protect certain foods from fungi and yeasts. It is mainly used to protect dairy products, sausages, and hams. It is also used to protect against candids.
