Sodium Diacetate
Sodium diacetate is the sodium salt of acetic acid, consisting of one molecule of acetic acid and another of sodium acetate. Crystalline solid, slightly hygroscopic, is used as an antimicrobial agent to retard the growth of microorganisms in bakery and meat products, among others, as a buffer agent for the control of acidity in foods, as a flavoring agent to impart the flavor of vinegar and in the preparation of seasonings.
